Eco Panzer's Baking Class

When I'm not riding my bike, hugging trees or invading small defenceless Eastern Block countries I like nothing better than a spot of baking. These recipes are for my legendary Flapjack and Chocolate Brownies. Both are ideal trail food, but are best served post-ride, with a nice mug of tea.

Flapjack Recipe

4oz (110g) Butter
1 dsrt spoon Golden syrup
4oz (110g) Sugar (Brown or un-refined)
6oz (175g) Porridge oats
Touch of self raising flour (<1oz)
+ 1 banana, and/or nuts, choc chips, cherries, etc.

Melt the butter in a saucepan over a gentle heat, then add the sugar, oats and golden syrup, and a touch of flour if it is looking too gooey.
Add the other ingredients to the mixture (banana, nuts, chocolate, fruit) then pour into a lightly greased 8" square baking tin.
If you want them soft and stodgy, cook at 150ºC for 40-45 mins, or if you like them crunchy, then 180ºC for 30 mins. Scoff and repeat.

Tasty Industrial Germanic Flapjack

Chocolate Banana Brownies

110g Butter
225g Sugar
2 eggs
50g self raising flour
40 - 50g Cocoa powder
1 or 2 Bananas
50g dark chocolate (chips)
pinch of salt
drizzle of milk

Melt butter in a saucepan over a gentle heat, the add the sugar and remove from heat. Add cocoa powder, flour, eggs, salt and mix together.
If the mixture is too thick, add a touch of milk to achieve the required 'slop'. Now add the bananas (to taste) and choc chips, stir well and pop into a lightly greased 8" square baking tin. Cook at 180ºC for around 30 mins.
